Ultimate Fried Doughnuts and Their Types

Making fried yeas-ted donuts with multiple blankets/ glazing. Using whole milk, and organic butter, with Chocolate, cream cheese and peanut butter coatings.

Types of Doughnuts


A doughnut is a sweet dessert made with fried leavened dough with various toppings and flavors. Doughnuts made with high protein flour are less dense and more airy with yeast used as a leavening agent, which feeds on the present sugars and releases carbon dioxide. Hence, this results in raising the dough and making it light and porous. Whereas this is a biological process, in cake doughnuts which tend to be more dense; leavening process is chemical; using baking powder (baking soda + an acid) as leavening agent, this neutralizes the base and produces CO2 gas.

How to make Doughnuts

  • Milk
  • Fresh Yeast
  • Sugar
  • Flour
  • Butter
  • Vanilla extract
  • Salt
  • Apple cider vinegar
  • Olive oil
  • Eggs


In a bowl take 21 oz (or 600 g) of all purpose flour, 233 g of sugar, a tsp of instant yeast, 250 ml of whole milk, a tsp of salt; afterwards, add 1 whisked egg and mix to incorporate the ingredients. Thereafter, add 144 g of unsalted natural organic softened butter and mix to combine. Next, knead the dough for around 5 minutes or until smooth. Cover and let it rest for 15 minutes.

Now, knead again and transfer the dough to a bowl lined with olive oil, cover and let it rest for an hour before transferring it to fridge for 24 hours (cold fermentation).

Once done, take the dough out and roll it flat and cut into desired shape and portions. Then let the doughnuts rest for an hour in a warm environment (possibly with little steam).


Then in a pan heat some extra virgin olive oil (desired oil) to around 170o C for frying the doughnuts. Once the desired temperature is reached, place the doughnuts in the oil and cook for around a minute or half on both sides or until golden brown. After that take them out gently and let them cool for around 13 minutes.


Make sure the oil temperature is not above 170o C, as olive oil reaches a smoke point at around this temperature, for higher temperature use a good natural oil with higher smoke point, such peanut oil or coconut oil.

Air Fryer Donuts

Simply place the donuts in the air fryer with little bit oil and cook at 180o C / 350o F until brown and puffed up.

PointFruit Frosting

Put 10 oz of frozen raspberries in blender and blend to a smooth mixture and strain the resultant puree. After that add into it 3 oz of honey or sugar if needed and mix well to incorporate.

PointChocolate Frosting

Take some tempered dark chocolate and pour over the doughnuts.

Chocolate Donut

PointCream Cheese Frosting

Take 4 oz cream cheese, 150 ml honey, Vanilla extract 1.6 tsp and 200 ml milk and mix to combine.

PointPeanut Butter & Nut Frosting

Take some shelled roasted peanuts and blend them with a bit of honey, pinch of salt and olive oil. And then blend till a smooth peanut butter is achieved. Garnish with nuts.

Finally, immerse the doughnuts in the frosting and serve.
