Unique Simple Castella Cake

Castella Cake with unsettling characteristics. Making soft cake with natural ingredients like organic whole milk, honey, vinegar, and eggs.

Castella Cake with unsettling characteristics

  1. Flour
  2. Salt
  3. Sugar
  4. Eggs
  5. Vanilla Extract / Almond extract
  6. Olive oil/ Coconut Oil
  7. Honey
  8. Vinegar
  9. Dark chocolate
  10. Cocoa powder
  11. Milk
  • Take 70 g of olive oil (or any natural cooking oil) in a pan and add 36 g of dark chocolate, 64 g of whole milk and put it on low heat and mix. Turn off the heat and mix 40 g of natural cocoa powder, add in 72 g of flour, a tbsp of almond or vanilla extract and 6 eggs yolks and whisk.
  • After that, whip the egg whites with tsp of vinegar and a pinch of salt to soft peak consistency. And then add in 100 g of honey or sugar and mix to smooth consistency.
  • Now combine the two mixtures and mix to incorporate the ingredients. Pour it into a baking pan and top it off with chocolate chunks or nuts.

In the Oven

Then steam it out with a water bath in a preheated convection oven for an hour at 180o C.

Melted dark chocolate can be added on top when ready.
