For roasted potatoes we need waxy potatoes, they have low starch and high moisture, which thus can hold their shape better. Starchy potatoes are the opposite and are fluffier ideal for frying and baking.
First parboil the potatoes for 5 to 8 minutes.
Then chop them and add olive oil, salt, pepper and rosemary for seasonings.
Now roast them for 30 to 34 minutes at 200o C.
